Delicious Huevos Rancheros


-El Sembrador Re-fried beans (1/2 can)

-1.5 tbsp of El Sembrador tomato paste

-4 tbsp of El Sembrador corn oil

-1/2 tsp of El Sembrador Adobo with pimienta

-1 green onions (chopped)

-1/2 small avocado, sliced

-flour tortillas

-4 oz of sofrito blend

-2 eggs

-Optional: corn & mexican blend shredded cheese

Ingredient prep:

-Thinly slice avocados -prep egg, sofrito, tomato paste, corn oil, refried beans, green onions, adobo, cheese, and corn into small individual bowls (this will make it easier and faster to make)

  1. Spray olive oil in a small pot, place ½ can of refried beans in the pot on low-medium heat.

  2. In a large pan, drop 1 tbsp of corn oil and 4 oz of sofrito blend.

  3. Begin weaving in tomato paste to the mix, let simmer until thick, and set aside on low heat to keep warm.

  4. In a small pan, drop 1 tsp of oil and a cracked egg to fry it. Cook the egg until the yolk is covered with a light, white film.

  5. In a medium pan, spray olive oil, and fry a tortilla over medium heat until golden brown. Flip to do the same to the other side. Do not overcook, but cook until both sides are crispy.

  6. Place the tortilla on a plate, and spread a light layer of refried beans onto the tortilla. Then carefully place the fried egg on the tortilla. Drizzle sofrito tomato sauce over the tortilla lightly, along with green onions, avocado, corn, and shredded cheese.
